His restaurant, Lasan, is on the Independent's list of top ten Indian Restaurants in the UK, listed amongst the best Birmingham restaurants by the Guardian, and in Paul Fulford's (Birmingham Evening Mail), personal top five Birmingham restaurants. He has a string of awards as long as his booking list on a Saturday night and Jabbar fully agrees with this week's Tikka Masala revelations.
“I am surprised this didn't all come out years ago – this is just the tip of the iceberg, and it is about time these establishments were flushed out of the market. I mean Tikka Masala is not even true Indian food, I have never eaten more than half a spoon of Tikka Masala so why would I want to serve it to my customers, who come to me for a taste of true India”.
There is a world of difference between the cheap and cheerful mainstream curry house and the refined Indian cuisine offered by the likes of Lasan, and the difference is not just in the colour of the curry.
Artificial colourings are a banned substance in most top-notch restaurants like Lasan, and as for additives and colourings - Jabbar emphasizes that with high-class Indian culinary skills, there is no need to for such products, and you won't find a scrap on his premises.
“We use raw ingredients from a variety of Indian regions, and we have one of the best chef's in the country – with awards to prove it. I will openly accept any challenge to produce the best Indian cuisine in the UK!!”
Jabbars' chefs have a host of awards between them, one was a finalist in the International Indian Chef of the Year 2003 and the other, who is also his brother, was the winner of Hospitality Week's Authentic Foods of the World award 2003, and their talent and creativity in producing Indian gastronomy puts the Tikka Masala to shame.
From a traditional Indian background, Jabbar is passionate about his food, so much so, that at the age of 26 he set up this restaurant, committed to breaking the mould of the mainstream Indian restaurant stigma and allow people to marvel the Indian way of cooking in a high class, contemporary environment.
