Peel & rinse potatoes, cut each potato into 5 – 6 slices.
Boil the potato slices in a saucepan of water until just cooked. Set aside until required.
Separate saucepan – heat oil, add onion seeds, fennel seeds, curry leaves: stirring.
Remove pan from heat, add remaining ingredients, stirring well to combine.
Return pan on heat, stir –fry mixture for approx 1 minute.
Pour mixture over cooked potato slices; mix together, leave to simmer for approx 5 minutes.
Ready to serve.
