Finely grate the carrots.
In medium sized pot heat ghee and fry off bay leaf and cinnamon sticks.
Add grated carrots, sweat down carrots until soft.
Add all dry ingredients.
Add cream and reduce until thick. (Approx 5-10 minutes)
Take off heat and allow it to cool down.
Roll out puff Pastry (2mm thick - 4inchs x 3 inches)
Fold into Samosa like triangular parcel, leaving one side open.
Fill parcel with cooked carrot mixture, (leave the parcel open).
Place the carrot parcel on to a greased foil and on to the oven tray.
Place the tray into hot oven and cook for 5-7 minutes, until the pastry has puffed and has become crisp.
Dress serving plate with strawberry coulis, Place carrot halva onto the plate and serve with vanilla ice cream.
